A favourite flavour of most people. The glaze makes the loaf.

LEMON LOAF
1/2 cup Margarine
1 cup Sugar
2 Eggs
1/2 cup Milk
1 1/2 cups All purpose Flour
1 tsp. Baking Powder
1/2 tsp. Salt
1 Grated rind of Lemon

In large bowl, cream butter, sugar and 1 egg. Beat in second egg. Blend in milk.

In second bowl thoroughly stir flour, baking powder,
salt, and lemon rind. Pour over batter. Stir to moisten. Spoon into greased loaf pan 9x5x3
inch. Bake in 350F oven for 1 hour until it tests done. Remove from oven and glaze. Cool in pan 10 minutes. Remove from pan. Cool and wrap.
Yield: 1 loaf.

GLAZE:
Juice of 1lemon
1/4 cup Granulated Sugar

Combine lemon juice and sugar in small saucepan.
Heat and stir to dissolve sugar. Spoon evenly over top of hot loaf.

The Great Pumpkin Loaf

Ingredients
6 Tbsp. soft Margarine or butter
1 cup sugar
1 Tbsp. molasses
2 eggs, beaten
1 cup cooked pumpkin puree (or use canned)
2 cups whole wheat pastry flour, sifted 2 tsp. baking powder
2 tsp. cocoa
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp.cloves
1/4 tsp. salt
1/4 tsp. baking soda
3/4 cup walnuts,chopped

Directions
Cream margarine and sugar together, stir in molasses,eggs,and pumpkin puree.

Sift flour again with baking powder,cocoa,cinnamon,ginger,cloves,salt,and baking soda.
Gradually stir flour mixture and milk, alternately, into pumpkin mixture. Stir in walnuts.

Pour into a greased loaf pan. Bake in a 350 degree
oven for 60 minutes, or until done. Test with a
toothpick if it comes clean it is done. Cool loaf before removing from pan.

Chocolate Nut Patties
Makes 30

1 pound semi-sweet chocolate
3/4 cup assorted roasted and raw nuts,
(such as cashews,macadamias,pecans,walnuts and hazelnuts) roughly chopped
1. To temper chocolate cover a heating pad with a kitchen towel, and set pad to lowest setting. Line two baking pans with parchment paper, and set aside, Using a sharp knife, shave chocolate.

2. In a medium glass bowl, heat 2/3's of the chocolate in microwave at 30% power for 1 minute. Stir chocolate, and continue heating at 30% power in 10-second intervals until an instant-read thermometer registers 120 degrees. Remove from microwave.

3. Stir in remaining shaved chocolate with rubber spatula. Stir constantly, bringing chocolate up sides and back down into bowl until temperature reaches between 86 and 89 degrees, adjusting setting if necessary.

4. Working quickly, pour 2 tablespoons of tempered chocolate onto prepared sheets to form 2-inch patties, spaced 2 inches apart. Let chocolate stand until it just begins to set. Sprinkle 1 teaspoon chopped nuts in each center: set aside in cool place to harden. Once completely set, transfer to an airtight container at room temperature for up to 1 month.

CANDY BAR BROWNIES
3/4 cup butter or margarine, MELTED
2 cups sugar
4 eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1/3 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
4 Snickers bars (2.07 ounces each), cut into 1/4 pieces
3 plain milk chocolate candy bars (1.55 ounces each), coarsely chopped

In a bowl, combine butter, sugar, eggs and vanilla. Combine flour, cocoa, baking powder, and salt; set aside 1/4 cup. Add remaining dry ingredients to the egg mixture; mix well. Toss Snickers pieces with the reserved flour mixture; stir into batter. Transfer to a gresed 13-in.X9-in.X2-in. baking pan.

Sprinkle with the milk chocolate candy bar pieces. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean (do not overbake).
Cool on a wire rack. Chill before cutting. Yeild: 3 dozen.

CheeseCake Brownies
Makes about 5 dozen
4 tablespoons unsalted butter, plus more for pan
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
6 ounces bittersweet chocolate,chopped
5 large eggs
2 large egg yolks
1 1/3 cup sugar
1 1/2 teaspoons pure vanilla extract
1 pound cream cheese

1. Heat oven to 350 degrees. Butter a 9-by-13-inch baking pan, and line with parchment.Whisk together flour, baking powder, and salt, and set aside. In the top of a barely simmering double boiler, melt together chocolate and butter. Remove from heat.

2. In the bowl of an electric mixer fitted with the whisk attachment, beat together 3 eggs and 1 cup sugar on high speed until thick and fluffy, about 5 minutes. On low speed, add reserved chocolate mixture and 1 teaspoon vanilla extract. When combined add flour mixture. Stir until just combined. Spread mixture evenly into prepared pan. Set aside.

3. In the clean bowl of the electric mixer fitted with the paddle attachment, beat together cream cheese, remaining eggs and yolks, remaining sugar, and remaining vanilla on medium speed, until smooth. Pour over chocolate mixture.Bake until cheese mixture is golden and set about 25 minutes, Transfer to a wire rack to cool completely. Cut into about 1-by- 1/2-inch pieces.

One of the quickest to assemble with no pre-browning.
CHICKEN HURRY
2 1/2 -3 lbs. Chicken
1/2 Ketchup
1/4 Water
1/4 Packed Brown Sugar
1 Envelope Dry Onion Soup Mix

(Line casserole dish or small roaster with aluminum foil) Arrange chicken parts in dish or roaster. In small bowl, combine ketchup, water, sugar and soup mix. Mix together well. Pour over chicken making sure sauce is on every piece. (Cover with aluminum foil and seal both top and bottom to make packet, this seal prevents steam from escaping) Bake in 350F oven for at least 1 hour until very tender. Serves 4-6.

Bean Patties
1 cup cooked beans drained
1/4 cup diced onion
cornmeal
1/4 tsp black pepper

Mash the beans up, then add chopped onions, pepper, or any other herbs or seasoning you desire. Mix in just enough cornmeal to make it possible to shape into patties made as thin as possible.
Fry these patties in a skillet with some grease or butter until brown on both sides.
